Reading City Church • We are online and adaptable!

We reached out to Wade, the RCC Outreach Coordinator to see how they have adapted during COVID -19

WRCRF: How have you modified your daily business flow for COVID -19

Wade: Reading City Church has suspended gatherings in our church building, but we knew we needed to remain a community resource. To do so, we converted the landing page of our website into a community resource page during this time of crisis. www.ReadingCityChurch.com now has links to community news, numerous weekly blog posts written by our staff, prayer resources, as well as relevant entertaining videos, to pass the time. We have strengthened our social media presence such as Facebook and YouTube. We are building a team of volunteers to help meet the needs of the vulnerable populations in our congregation and in the community around us. We also have begun streaming our services, and have started hosting a weekly community update on Facebook live every Thursday. We hope that these changes would help the community remain in touch with us so that we can help, and also would provide spiritual and emotional support during these tough times.

WRCRF: What is the best tip/quote/idea you have learned from this experience so far?

Wade: People are resilient, and when it comes down to it, you can grow and change a lot in a week. Despite the fact that we were ill-prepared to convert to a completely online presence at the drop of a hat, I am continually impressed with all the hard work our staff has accomplished, and I am sure that people are rising to the challenge all over our community. So I just want to encourage us all to see how incredibly adaptable we all can be when it counts. I have seen it in many places.

WRCRF: What have you been watching/listening to/eating/making this week

Wade: I have been making a lot of rice-based dishes (yay for stocking up on rice), and I also made a really great Pho recipe this past week. My wife works at Reading Hospital, so I have been making sure we have meals that she can take to work and that reheat well. One of my favorite dishes right now is a vegan orange sauce. I will link the recipe I base mine off, but I do make a few changes. If you are not vegan, I would substitute chicken for the baked tofu, or you can leave out the tofu entirely and toss in some stir-fried veggies (I did bok-choy, a green pepper, onion, and slivered carrot). I put it over rice, toss in the meat or meat substitute, add the veggies if I made them, and top with peanuts (plain or honey roasted). It has been a real hit in our apartment. The only change I make to the recipe really is I use about half as much rice vinegar as they call for. I also consistently use ginger powder rather than fresh ginger, because fresh ginger was hard to get that past two times I have been to the store. Here is the base recipe I use: https://www.noracooks.com/crispy-baked-orange-tofu/
